Instructions

  1. Start by rinsing the sushi rice under cold water until the water runs clear.
  2. Combine the rinsed rice and water in a saucepan. Bring to a boil, then reduce the heat to low, cover and cook for 20 minutes.
  3. While the rice is cooking, heat the rice vinegar, sugar, and salt in a small saucepan until the sugar dissolves. Set aside.
  4. Once the rice is cooked, transfer it to a large bowl and gradually fold in the vinegar mixture. Let it cool to room temperature.
  5. Place a sheet of nori on a sushi mat, shiny side down. Wet your hands and spread a thin layer of rice on the nori, leaving about 1 inch at the top.
  6. Place a few pieces of cucumber, avocado, and fish on the rice. Start rolling from the bottom, using the sushi mat to apply even pressure. Keep rolling until you reach the top of the nori, then wet the top edge with a little water to seal the roll.
  7. Repeat with the remaining ingredients.
  8. Serve the hand roll sushi with soy sauce, wasabi, and pickled ginger.
